Tiki Passion Pineapple Rum Cocktail

I really like the taste of Passion Fruit (the syrup at least). This cocktail is another great example of what can be done with it. The Passion Fruit is very present, but isn’t as overwhelming as some cocktails based on it.

0.75 oz Passion Fruit Syrup
1.0 oz Pineapple Juice
1.0 oz Lime Juice
1.0 oz Orange Juice
0.75 oz Demerara Syrup (simple syrup made from Turbinado sugar)
2.0 oz Dark Rum

Ice, shaker, shake, strain. Simple. Good stuff!

Simple proportions, simple flavors.

This sweet, bourbon-based cocktail has a creamy/frothy consistency due to the pineapple juice.

1.0 oz Bourbon
1.0 oz Triple Sec
1.0 oz Creme de Banana
1.0 oz Pineapple Juice

Into a shaker with ice, add all of the ingredients. Shake, then strain into a glass with some of the ice.

Derby Daiquiri

This is a very nice mildly sweet and mildly tart, rum-based cocktail.

1.0 oz Orange Juice
0.5 oz Lime Juice
0.5 oz Simple Syrup
1.5 oz Light Rum

The original recipe calls for blending a handful of ice with the ingredients for 15 seconds, and then pouring, unstrained into a cocktail glass. I chose to shake crushed ice with the ingredients and avoided cleaning a blender.

Siboney

This a great cocktail that highlights passion fruit syrup. It is tart, and sweet. Along with that, add a good dark rum and it is full of flavor!

1.0 oz dark Jamaican rum (I used Plantation Double Aged Dark)
0.5 oz Lemon juice
0.5 oz Pineapple juice
0.5 oz Passion fruit syrup (I used Possmei)

Add ice and all ingredients to a cocktail shaker. Shake. Strain. Pour.

That’s a good cocktail!
